Red lentil soup | A simple spiced red lentil soup, based loosely on a Turkish recipe. |
You will need
- 2 cups red lentils (washed)
- 1 white onion
- 1 garlic clove
- 1 tbsp ginger paste
- 1 tbsp salt
- 1 tbsp cumin
- 1 tbsp olive oil
- 1/4 tsp tumeric
Method
- Dice the onion and fry in oil until slightly browned
- Paste garlic and add with ginger into the pan
- Add lentils and stir
- Add cumin and tumeric
- Add 6-7 cups of boiling water
- Simmer and stir occasionally with lid on for 30 minutes
- Serve with sumac and parsley on top
